Banana Biscotti Recipe

Banana Biscotti Ingredients

  • 2 1/4 cup flour
  • 1 tsp baking powder
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 1/2 cup confectioner's sugar
  • 2-3 tsp milk
  • 1 banana, small, ripe, mashed
  • 3/4 cup pecans, chopped (optional)

Banana Biscotti Directions

  1. Preheat oven to 350 degrees.
  2. Combine eggs, sugar, vanilla and mashed banana. Add flour, baking powder, and salt and beat until smooth. Mix in optional pecans.
  3. Bake for 30 minutes or until golden brown. Remove to wire rack to cool for 15 minutes. Reduce oven temperature to 300 degrees.
  4. Slice loaf as desired. Place slices on baking sheet and bake for 7 minutes on each side or until crisp.
  5. Add milk slowly to confectioner's sugar until mixture reaches drizzle consistency. Drizzle over finished biscotti.
