Healthy Biscotti Ingredients
3/4 cupflour, all purpose
3/4 cupflour, whole-wheat
1/2 cupoats, steel-cut
1/2 cupGrape Nuts cereal
2 tspBaking powder
1/4 tspSalt
1/2 cupBrown sugar
1Egg
1Egg white
1/4 cupHoney
1/2 cupApplesauce, unsweetened
1 tspVanilla extract
2 ozDark Chocolate, chopped
3/4 cupAlmonds, slivered
Healthy Biscotti Directions
Heat oven to 350 degrees.
Cream together butter, sugar, eggs and vanilla. In a separate bowl, mix flours, baking powder, xanthan gum and salt. Gradually add dry ingredients to egg and butter mixture, blending well. Fold in almonds and lemon zest.
Gather dough into a ball and lay it on a floured surface. Mold dough into desired shape and size. Bake for 20-25 minutes until lightly browned. Cool loaf for 10 minutes. Adjust oven temperature to 300 degrees.
Cut loaf into slices and lay them on a cookie sheet. Bake for 6-8 minutes on each side.
