Lemon Biscotti Ingredients
2 1/4 cupflour
1 tspbaking powder
1 cupsugar
2eggs
1 tspvanilla extract
1pinch of salt
1/2 cupconfectioner's sugar
2-3 tspmilk
3 tbslemon juice
1 tsplemon zest
3/4 cupalmonds, slivered, toasted (optional)
Lemon Biscotti Directions
Preheat oven to 350 degrees.
Combine eggs, sugar, vanilla, lemon juice, and lemon zest. Add flour, baking powder, and salt and beat until smooth. Mix in optional almonds.
Bake for 30 minutes or until golden brown. Remove to wire rack to cool for 15 minutes. Reduce oven temperature to 300 degrees.
Slice loaf as desired. Place slices on baking sheet and bake for 7 minutes on each side or until crisp.
Add milk slowly to confectioner's sugar until mixture reaches drizzle consistency. Drizzle over finished biscotti.
