Mini Biscotti Recipe

This mini biscotti recipe is the basic biscotti with a change to the size of your dough before baking- a technique you can try with other biscotti recipes!

mini Biscotti Ingredients

  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

mini Biscotti Directions

  1. Preheat oven to 350 degrees.
  2. Beat together oil, sugar eggs, and vanilla. Then, beat in flour, baking powder and salt.
  3. Form dough into 4 small logs. Bake for 15 minutes. Remove loaf to cool 15 minutes. Reduce oven temperature to 300 degrees.
  4. Cut loaf into slices and place on baking sheet. Bake for 4-5 minutes on each side, checking often for crispness.
