This mini biscotti recipe is the basic biscotti with a change to the size of your dough before baking- a technique you can try with other biscotti recipes!

mini Biscotti Ingredients
1/2 cupvegetable oil
3/4 cupsugar
2eggs
1 tspvanilla
2 cupsflour
1 1/2 tspbaking powder
1/4 tspsalt
mini Biscotti Directions
Preheat oven to 350 degrees.
Beat together oil, sugar eggs, and vanilla. Then, beat in flour, baking powder and salt.
Form dough into 4 small logs. Bake for 15 minutes. Remove loaf to cool 15 minutes. Reduce oven temperature to 300 degrees.
Cut loaf into slices and place on baking sheet. Bake for 4-5 minutes on each side, checking often for crispness.
