The (gluten free) ingredients used in this terrific, gluten-free biscotti recipe can be applied to other biscotti recipes to make them gluten free too!

Gluten-Free Biscotti Ingredients
1/2 cupbutter, softened
1 1/4 cupsugar
2 tspvanilla extract
1 1/2 cupflour, gluten-free
1/4 cupRice flour
1 tspBaking powder, gluten-free
1 tspXanthan gum
1 tspLemon zest
1 cupAlmonds, chopped
1pinch of salt
Gluten-Free Biscotti Directions
Heat oven to 350 degrees.
Cream together butter, sugar, eggs and vanilla. In a separate bowl, mix flours, baking powder, xanthan gum and salt. Gradually add dry ingredients to egg and butter mixture, blending well. Fold in almonds and lemon zest.
Gather dough into a ball and lay it on a floured surface. Mold dough into desired shape and size. Bake for 20-25 minutes until lightly browned. Cool loaf for 10 minutes. Adjust oven temperature to 300 degrees.
Cut loaf into slices and lay them on a cookie sheet. Bake for 6-8 minutes on each side.
