Gluten-Free Biscotti Recipe

The (gluten free) ingredients used in this terrific, gluten-free biscotti recipe can be applied to other biscotti recipes to make them gluten free too!

Gluten-Free Biscotti Ingredients

  • 1/2 cup butter, softened
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 egg white
  • 2 tsp vanilla extract
  • 1 1/2 cup flour, gluten-free
  • 1/4 cup Rice flour
  • 1 tsp Baking powder, gluten-free
  • 1 tsp Xanthan gum
  • 1 tsp Lemon zest
  • 1 cup Almonds, chopped
  • 1 pinch of salt

Gluten-Free Biscotti Directions

  1. Heat oven to 350 degrees.
  2. Cream together butter, sugar, eggs and vanilla. In a separate bowl, mix flours, baking powder, xanthan gum and salt. Gradually add dry ingredients to egg and butter mixture, blending well. Fold in almonds and lemon zest.
  3. Gather dough into a ball and lay it on a floured surface. Mold dough into desired shape and size. Bake for 20-25 minutes until lightly browned. Cool loaf for 10 minutes. Adjust oven temperature to 300 degrees.
  4. Cut loaf into slices and lay them on a cookie sheet. Bake for 6-8 minutes on each side.
