Pumpkin Biscotti Recipe

This unique pumpkin biscotti recipe is great for the holiday season and will most certainly surprise both guests who've never tried biscotti and those who have.

Pumpkin Biscotti Ingredients

  • 2 1/4 cup flour
  • 1 tsp baking powder
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 1/2 cup confectioner's sugar
  • 2-3 tsp milk
  • 1/2 cup pumpkin purée
  • 2 tsp pumpkin pie spice

Pumpkin Biscotti Directions

  1. Preheat oven to 350 degrees.
  2. Combine eggs, sugar, vanilla, pumpkin puree and pumpkin pie spice. Add flour, baking powder, and salt and beat until smooth.
  3. Bake for 30 minutes or until golden brown. Remove to wire rack to cool for 15 minutes. Reduce oven temperature to 300 degrees.
  4. Slice loaf as desired. Place slices on baking sheet and bake for 7 minutes on each side or until crisp.
  5. Add milk slowly to confectioner's sugar until mixture reaches drizzle consistency. Drizzle over finished biscotti.
